I have a couple of Rabbit 2000 series development kits. I've tested the plain one, but never did any useful projects with it. I haven't tested the ethernet board.
Some time back Digi International swallowed and pretty much buried Rabbit. Information may be hard to come by.
SDCC may have some support along the Zilog branches.
